Coconut Pancakes

You can use your normal pancake batter or store bought pancake mix and just drizzle Caribbean Spice Belize Raw Coconut Honey as a perfect healthy alternative to syrup.  This recipe adds some real coconut flavor to your pancakes.

 

What you will need:

3 TBSP butter, melted

1 Egg

1   1/4 cup coconut milk

1  1/2 cups all-purpose flour

1 TBSP baking powder

1 tsp salt

1 TBSP white sugar

Sift  flour, baking powder, salt and sugar. Make a well in the center and pour in the milk, egg and melted butter; mix until smooth.

Heat a lightly oiled griddle (use Coconut Oil if you have it) or pan over medium high heat. Pour about 1/4 cup for each pancake. Cook till golden brown on each side, and top with Caribbean Spice Belize Raw Coconut Honey you can add raw Coconut Flakes or toasted Caribbean Spice Belize Organic Coconut Flakes as well if you want.  To toast coconut flakes, put in a pan on high heat till just browned and start to smell like the islands. Watch closely they burn easily!

The more layers of coconut flavor you add to this dish will make it explode in flavor, as there are so many layers to the taste of a coconut. The oil, milk, flakes and the coconut honey really makes this dish something amazing.
